The concern to make new wines, to return to traditional elaborations and to take advantage of all the resources provided by the grape, led us to launch a new line, different to white wines, which are marketed under the Clandestino by Menade brand. This new line continues with the same philosophy in the field and in development as the rest of the wines of the winery: Wines without makeup, with personality and authenticity.
Clandestino Tinto is made with Tinta de Toro from strains of more than 100 years planted in glass and low yield. The must ferments with wild yeasts in small stainless steel tanks and makes bazookas without looking for much extraction. After the alcoholic, the malolactic fermentation develops spontaneously. The wine does not filter, but decanted naturally and does not add sulfur.
