Nosso 2017, histamine free
Released just a few weeks back, we love the wine’s honeyed characteristics – due no doubt to the point at which we harvested the grapes and in such a dry year – and though we made it very much in keeping with previous vintages we think you’ll agree that it’s altogether finer and more elegant.
The back-label incorporates symbolic references to our feelings as to what ideally constitutes a “proper” Natural Wine, and we are delighted – as ever- that not only is it excellently crafted and flavoured but goes down a treat.
As you will know, no sulphur is employed in the making of this wine, its mallo-lactic is not forced but entirely spontaneous – ensuring its microbiological stability; and 5 months lees-ageing rounds things out nicely by virtue of providing most excellent mouth-feel.
We are quite chuffed too that the Unión Vegetariana Española/Spanish Vegetarian Union has conferred on us V-Label certification – acknowledging our environmentally sustainable practices and code of conduct and officially sanctioning the fact that at no stage, whether in our vineyards or during production, do we use any animal derived products such as casein or egg whites; clarification effected of course with bentonite (an absorbent aluminium phyllosilicate clay).
Further, our lab results indicate that Nosso is also histamine free or at the very least well below the tolerable threshold – in common with all our wines.
Histamine – for those of you not in the know – is a naturally occurring organic compound (specifically a biogenic anime or amino acid) present in the human body and also in some foods. Generated by bacteria, it therefore rarely materializes in white wine but is not uncommon in those that have undergone mallo-lactic fermentation and is consequently more commonly found in red wines.
Most of us metabolize histamines no problem thanks to an enzyme called Diamine oxidase/aka histaminase; but, for those with a shortage, this can result in an allergy or intolerance that produces headaches, pulmonary inflammations or blocked nasal passages.
